Saba.. e neve!

La Saba è un tipico condimento emiliano ottenuto dal mosto d'uva, in particolare quello dolcissimo e scuro di Ancellotta.


Si ottiene facendo bollire lentamente il mosto per molte ore fino a ridurlo di due terzi circa, e viene utilizzata come condimento per insalate, carne, verdure grigliate ma anche come ottimo accompagnamento per dolci, gelati e creme.



I nostri nonni usavano preparare un "sorbetto" mescolando la Saba alla neve appena caduta.
